Title: Mail offline, how it works?

I've been hearing from friends and co-workers about mail offline, I wonder how it works...

I know that all I do is to registered a domain name and some hosting company will handle a mail server for me.  I know how to build an online mail server but offline mail server is quite unsure how it works.

Please help, I try to search for any sources relate to this topic through yahoo and I found no clue?

could be that Offline mail server vs. web-based mail server?

like smtp,pop3 vs. http
