what levels of raid do i need to know for exam 70-215 do i need to know all of them?

I would know all the levels that Server supports. So you'll need to know RAID 0 (Disk striping w/out parity), RAID 1 (Disk mirroring), and RAID 5 (Disk striping w/ parity)

If you're asking about levels like RAID 1+0 then no, you won't need to know those for the exam. You'll only need to know what Server natively supports.
