Personally I didn't like and so can't really recommend the
Syngress/Osborne and New Riders books for 70-210.
Try the book by Alan Carter. You only need to read some (most) of the book
and skip the advance stuff (for other exams) for later.
Get some serious hands on though, especially on Setup/installation
and disk management.
Finally back it up with brain dumps and other quick review material on the
net
before doing the actual exam.
The exams are about $250 Aust the last time I did one.

The Mike Meyers passport series is good if you have some sort of
understanding of W2K. I did come across an excellent book by George
Spalding which is part of the Osborne Network Professionals Library series
called Windows 2000 Administration. It kind of covers 210/215/218 - a good
read & I wish I had it before I started my W2K program.
