I would study for the 70-228 SQL 2000 test instead of the version 7
test, unless you have a pressing reason to study for the version 7
test.

Also, not sure about version 7, but you can get books from Microsoft
and other publishers that have 120 trial versions of SQL 2000, with
which you can go through the exercises on the actual SQL server
itself.

CBT Nuggets has a cbt course, but it is form SQL 2000 administration.
