I'm a little confused about UNIX, I was going to take a UNIX course but I don't know what to take. How many UNIX cert's are there and what are they? What does everyone recommend.

Well, there is the SAIR/GNU Linux courses, the Linux+ that will be going live sometimes in the next year, SCO, Solaris, and Red Hat's RHCE, but on the whole UNIX certs are not that popular. A course in it might be a good idea, but certs tend to be worth less in the UNIX world that in the M$ or Novell world. UNIX sysadmins need a lot of UNIX knowlegde, but they are rarely certified, possibly because there are so many flavours out there that such certs are less useful than those that come from a single vendor. A regular into class at a university may be a good place to start, or you can get a distro at home and start practicing with it.
