Storage technology is a very deep field, and you ask a very high-level, non-specific question. But I'll try to help:

SAN = Storage Area Network.

A SAN is a collection of hosts, storage devices and interconnecting devices such as bridges or switches. A SAN is usually implemented over fiber channel, and is segmented into zones by the switches (similar to ethernet VLANs).

RAID = Redundant Array of Independent Disks.

RAID is a way of combining multiple physical disk drives into logical devices such that performance and/or fault tolerance is improved. There are numerous ways of configuring RAID devices, depending on how you want them to perform and how much money/equipment you have to work with.

Probably the best vendor-independent storage certification is offered by SNIA (http://www.snia.org). Other vendors such as EMC, Veritas, NetApp, etc. offer extensive information as well. Good luck!
