I have Cisco 2500 router with IOS version 12.0. My question is can I run my
router as DHCP servers and how?

You have to set the pool that you want. Including the name and ip address
range. Go into the config terminal and look at ip dhcp ? and see what kind
of list it gives you.

The feature first appears in 12.0(1)T, or, in mainline distributions, 12.1.
