What to get out of experience at work ?

| I work for a company that only uses Nortel/Bay equipment. Everything
is already set up and they have no plans to change anything. My
question is what should I do to get the most out of working there?
Apparently consultants and SBC configured and designed the network.
Is this what it is like at most jobs? What do WAN people do when they
go to work at a place that is already set up and there are no plans to
change anytime soon?

There are ALWAYS changes if your organization is large enough. Regardless,
things will break, there are bigger/better ways of doing things. Routing is
routing so whether you learn it on Nortel or Cisco gear is immaterial. The
first boxes I ever configured were Welfleet boxes.
