Was looking at servers the other day and noticed one was a 1U and
another was a 2U. Other than one being slimmer, I really did not notice
any difference, Can anyone tell me what the difference between a 1U
server and a 2U server is?

The number of spaces it takes up in a rack mount. The holes on the rack are
measured in U's.

With all that information you give, I will say the only difference is the
size of the server. 2U = double the thickness of 1U. 1U = 1.7". More
specific is hard to be without comparing them. 2U would be a little easier
to fit some more cards in to and normally have 6 Hot Swap HD trays in the
fron instead of only 2 for the 1U. But this will be a difference depending
on the brand.
