| Nope - no easy way. 
It will have to be:
1. Backup all your data from Exchange 2000 server into PST files.
2. Delete all Exchange 2000 mailboxes.
3. Uninstall ALL Exchange 2000 servers.
4. Run /forestprep again and pick a new name
