We are currently testing exchange 2000 and looking to put it in production
in mid-januarary of next year. One question that has come is if you can
rename an exchange server. I looked in technet but couldn't find anything on
the subject.

The answer is no. If you rename an Exchange 2000 server, the system
attendant service (and therefore some other services, too) will not start
afterwards.
