You will need to do several tasks to make it happen.

1. Enter the 2nd domain's forward lookup zone into your
Active Directory DNS
2. Add a Host record to the new zone with the IP address
of you existing Exchange server (i.e.
mail.theirdomain.com)
3. Add a Mail Exchanger record to the new zone that
points to your existing Exchange server
4. In your Exchange Server's System Manager add a new
SMTP record to the recipient policy (the default policy
unless you have made a new one specifically for your
implementation)
5. Make sure that the record for each of the members of
the new company have SMTP addresses specific to the new
domain. (they can have addresses in both domains if
desired.)

I'm sure there are other nuances but that is the basic
scenario that works for me.
