Is it possible to disable other services
like NNTP, IMAP, POP3 etc?

I use my exchange server (at home)
the only thing I need is SMTP and for my outlook client
to connect to my EX2K server.

What services can I disable?

Yes, it's possible. The ones you reference can be disabled without
causing any harm. There are others (not Exchange related) that can
also be stopped and disabled.

That depends on what else you use or don't use on the machine.
Microsoft has a several security operations books that go into this
area (and many others) in great detail.
