Open the Exchange System Manager;
Drill down to the server you want to manage;
Open Protocols;
Open SMTP;

You have a choice of creating another SMTP server or
altering the default. Either way, on the General tab of
the SMTP Virtual Server (the new or default one), click on
the Advanced button and click on edit or add (depending on
which virtual server you selected).

That configures the inbound connections...for outbound, on
the same configuration properties of the SMTP Virtual
Server, select the Delivery tab. Now click on
the "Outbound Connections..." button.

Change the TCP Port parameter to whatever you need it to
be. Be sure of the ramifications of doing this and how
this will affect communications to other SMTP servers.
