I wanted to start Learning Linux in maybe a month. I currently have Knopixx. I see Red Hat is very popular, why is that? Most of the books are based on red Hat. Is it possible to buy a red hat book but use Knopix and practice that way?

Should I just stick with Knopix or should I jsut install Red Had?

Linux is Linux. You can learn the basics with any distribution.

I recommend Red Hat. Go to linuxiso.org and get yourself the ISO (latest is 9.0). redhat.com (you'll have to find the exact URL) has some awesome manuals in html and pdf format - just follow them. In my opinion, Red Hat has the best documentation of any distro.
