Well I know out in the Windows world that you can have multiple processors.

I was wondering if there are any Linux distros that have that capability built into them?

All Linux distros should. Just enable SMP in the kernel. Very easy. You can verify both are recognized using dmesg or /proc/cpuinfo.

A distro like Red Hat should probably recognize you have 2 CPUs and build an SMP enabled kernel for you so you won't have to recompile your kernel.
