FreeBSD - the best documented and most user friendly, more cutting edge features
NetBSD - the most portable, also very secure
OpenBSD - insanely secure

For a beginner I'd defininately start out with FreeBSD. OpenBSD's worth a shot though once you've become accustomed to the BSD way of doing things. Most of my servers that have been around more then 6 months run FreeBSD, and most of the new ones run OpenBSD.

FreeBSD definetly!

There are some Secure OSs that are BSD based that most people forget also.
