Try giving something about configuring Apache or regular expressions. That would test your Unix smarts more than listing a directory. Also, use some of the more obscure command line options, like those that are used to view unprinting characters of a file.

I'm going to try to keep the questions easy for now, although I may add bonus questions now and then to challenge some of the more advanced students.

How about this: You give two questions instead of one, like the QOD guy does in the A+ forum. One is geared at newbies, the other geared at power users. People could learn from both.
