Does Microsoft give out a piece of paper so I can prove I passed the 70-210 (or any other exam)?

Yes. You get it from the testing center right after you are finished with the exam.

..and thay give you a MCSA certificate oncce you've passed the last exam, I suppose.

After passing 70-210 (or just about any of the other exams in the MCSA or MCSE tracks), you automatically achieve MCP (Microsoft Certified Professional) status, and, as I understand it, they mail you a MCP certificate, pin, wallet card, etc.

I can confirm that once you have registered on the MCP site they send you a welcome pack which includes a certificate, lapel badge and a credit card sized ID card for your wallet.
