I am thinking of doing the exams 70-210 and 70-215 self study.

What computer material including software should I need to purchase so that I can undertake majority of the practical exercises included in most relevant study guide books.

I have at the moment:

2 workstations with NICs
1 RJ45 crossover cable
Windows 98 CD

I know I will have to purchase a copy of Win2k professional and server.

If you buy the MOC ( Microsoft official curriculum), you will get win2000 Pro and Win2000 Server Evaluation edition, which is good for 120 Days.
You can order the Eval Version for Advanced Server here: http://www.microsoft.com/windows2000/edk/

HW: 2 servers running as DCs and 1 client machine running win2k pro.

SW: win2K server and pro

1 switch or hub. some CAT 5 cables, and plenty of dedication
