Can anyone explain to me a little further what this command actually accomplishes. I'd like to take it out of my configuration unless there is a critical need for it, Which I cannot find?

I found this in the command reference guide, although other than this I can't help you.

route dnat
Specify that when an incoming packet does a route lookup, the incoming interface is used to determine which interface the packet should go to, and which is the next hop.
