Does anyone know of a way to search the private information store to see if a recipient had been sending emails to a certain email address?

If you know the rough time then use the event viewer...failing that there are a few tools out there (the names escape me at the mo' though)

I've had some success searching the log files for specific addresses, exchsrvr\tracking.log.

I suggest you use the "track Message" command under the tools menu of the Exchange administrator.
