What defines 802.3? Is it the format of the frame?
Any information or tidbits would be greatly appreciated!

| Not sure this will help, but
802.3 frame is for early version of Novell upto 3.11
802.2 frame is for version 3.12 and the latest.

The IEEE 802.3 standard is a complicated document (at least in CCNA terms ). The format of the frame is just a part of this standard. The standard also governs details of coding, timing, voltages, collision detection rules and so on. In ISO OSI terminology the standard covers the physical layer as well as the MAC sublayer of the Data link layer.
The 802.4 (token bus) and 802.5 (token ring) covers similar layers for two other technologies.
802.2 on the other hand covers the LLC upper sublayer of the data link layer. This layer is common to 802.3, 802.4, 802.5 and others. The 802.2 standard adds additional fields to the frame format but also defines rules for (optional) error recovery, windowing etc.
For your exam you should probably worry most about frame formats and its implications for upper layer protocols.
