For the first...

I don't know what you mean by "easy", but we have gigabit (1,000 Mb/s) transfer going over Cat 5 and Cat 5e.

Cat 6 is officially rated for transfer between 200-250 Mb/s so I'm guessing that's the answer you're looking for.
